    For approximately 10 dosas, you will need:

    • 1 cup of mixed millets (foxtail, pearl, finger, or little millet)
    • ½ cup of urad dal (split black gram)
    • ¼ cup of poha (flattened rice)
    • 1 teaspoon fenugreek seeds
    • Salt to taste

    Step-by-step Instructions
    1. Prepare the Ingredients:
    • Wash the millets thoroughly under running water and soak them in water for 6-8 hours or overnight.
    • Similarly, soak urad dal and fenugreek seeds in a separate bowl for the same duration.
    2. Grind the Batter:
    • Drain the soaked millets and urad dal.
    • In a blender, first grind the urad dal and fenugreek seeds with a little water until it forms a smooth, fluffy batter.
    • Next, grind the millets and poha/flattened rice into a smooth paste.
    • Combine both mixtures in a large bowl, add salt, and mix well.
    3. Fermentation:
    • Cover the batter and let it ferment in a warm place for 8-10 hours or overnight.
    • Fermentation increases the batter’s nutritional value and gives the dosa its signature tangy flavor.
    4. Preparing the Dosa:
    • Heat a flat, non-stick tawa (griddle) on medium flame. Grease it lightly with oil.
    • Stir the batter gently and pour a ladleful onto the center of the tawa. Spread it in a circular motion to form a thin crepe.
    • Drizzle a few drops of oil or ghee around the edges.
    • Cook until the dosa turns golden and crispy. Flip if you prefer cooking both sides.
    5. Serve Hot:
    • Pair your millet dosa with coconut chutney, sambar, or tomato chutney for a wholesome meal.
    Coconut Chutney Recipe
    Ingredients:
    • 1 cup grated coconut
    • 2 tablespoons roasted chana dal
    • 1 green chili
    • 1 small piece of ginger
    • Salt to taste
    • Water as needed
    • 1 teaspoon oil
    • ½ teaspoon mustard seeds
    • 5-6 curry leaves
    • A pinch of asafoetida
    Instructions:
    1. Blend coconut, roasted chana dal, chili, ginger, and salt with water to make a smooth paste.
    2. Heat oil, add mustard seeds, curry leaves, and asafoetida for tempering.
    3. Pour the tempering over the chutney.
    4. Mix well and serve with dosa or idli.
